I’m in love with these oatmeal, banana chocolate chip muffins! They were so quick and easy to make and feature lots of clean ingredients. Here’s how I made them.
DRY ITEMS – Combine all these in a bowl, set aside
3 cups of old fashioned, rolled oats
2 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
Pinch of salt
WET ITEMS – combine and then pour into the dry ingredients
2-3 ripe bananas, mashed
2 eggs (or flax eggs!)
1 and ½ cup almond milk
Mix the wet into the dry ingredients and combine into a thick batter. Spray muffin pan with a non-stick spray. Spoon batter into each muffin about 3/4 of the way up, then top off so they’re equally full. This ensures they all cook evenly! Top each one with dark chocolate or semi-sweet chocolate chips. Bake at 350 for about 20-25 minutes until a fork comes out clean. Enjoy!
